The View's breakfast

When was the last occasion you took time to actually savour a mouth-wateringly delicious breakfast? Not a banana that’s been haphazardly grabbed while you’re running out the door on the way to work, or a bowl of cereal that’s been eaten, standing up, in the kitchen – one hand feeding you; the other, the kids, and not (worst of all) no breakfast at all because there simply wasn’t time. All our lives we’ve repeated the mantra ‘breakfast is the most important meal of the day’, but come adulthood, it slowly gets squeezed out of the schedule. But not at The View at Seven Pines Resort Ibiza. Here, breakfast is king.

When was your last memorable breakfast?

The onus at our resort is on relaxation, taking precious time for ourselves, and above all, eating well. This is what you’ll find at our onsite restaurant The View, now at the forefront of the island’s culinary dining scene. A place to relish every mouthful of a hearty, healthy breakfast while looking out at one of the most spectacular views on the island – Es Vedrà pokes out from the horizon in the distance – it really is the very best way to start any day. And the good news is, it’s open to island residents and visitors in addition to hotel guests.

Available between 8am and 11am every day, breakfast at The View is all about the experience. It’s about pairing up with loved ones to share chats over frothy coffees; it’s about starting your day how you mean to going on – by fuelling it with fresh, free-range produce – and it’s about allowing yourself to ease into the day with no rush, no pressure and no fuss. Just plate upon plate of deliciousness.

Let’s start with a breakfast basic – the all-encompassing buffet. At The View, the focus is on quality, so we have our very own baker who arrives every morning to make fresh bread and pastries onsite. We defy your knees not to wobble on tasting a warm, soft croissant plied with our very own, custom-made jam or chocolate spread, if you’re feeling particularly decadent. There’s a wide selection of fresh, juicy fruit – from melon to pineapple to apricot and berries – as well as a range of tempting bircher mueslis, some overflowing with nuts and sultanas, others with slices of coconut, and of course, a range of superfood additions like flax seed, chia seed and goji berries are available for accompaniment.

Those who like to start the day with something more savoury will be in heaven at our hot buffet, which features classics including bacon and sausage, as well as the more traditional local flavours of chorizo and cured meats. Then there’s cured tuna and lubina for the fish fans, and a selection of worldwide cheeses to be accompanied by freshly made confits, olives, capers, and pickled onions. Tasty!

The best is yet to come however, because once you’ve hit the buffet there’s also a standout selection of global breakfast favourites from the à la carte breakfast menu to choose from. If you’re feeling healthy and looking for energy to see you right the way through the day, try the amaranth porridge, made from a comforting combination of coconut milk, fresh berries, organic seeds, coconut flakes and soya yoghurt. Or for something sweet, try the delectable French Toast made with caramelised brioche and served with whipped ricotta and berry compote, or pancakes and waffles served with lashings of organic agave syrup and caramelised fruit.

All breakfast aficionados will be delighted to read that eggs play a starring role at The View. Order them ‘your way’ – scrambled, poached, fried, whatever you fancy – and they’ll arrive with a perfectly grilled asparagus spear and tomato, and drizzled with oil and parmesan shavings for a salty flavour. Opt for a fluffy omelette served with any fillings you fancy, or for something unabashedly luxurious, the omelette aux truffes, made with Comté cheese and grated black truffle. Try the classic eggs Benedict – two perfectly poached eggs served atop fennel brioche and drenched in Espelette Hollandaise, or the restaurant’s signature Shakshouka – poached free-range eggs served on a bed of onions, peppers, sweet dry chilli, satay spice, cracked coriander, served with a savoury zaatar crisp.

Those completely won over by the argument that they deserve to indulge in a truly lavish breakfast will rejoice on choosing the eggs Royale, two soft boiled eggs served with wilted spinach, steamed baby potato and 30 grams of luxurious Imperial Caviar, finished with a helping of crème fraiche and lemon confit. You see, at The View, we take extravagance seriously. Pull up a pew, tuck into the feast and admire the Med as it spreads out below you, then repeat the mantra, ‘breakfast is the most important meal of the day.’ At least now it makes sense.
