Sailing into the sunset

When it comes to taking a trip to the island of Ibiza, there are a few things that you simply cannot leave without having experienced. A trip to the beach to swim in the crystal clear waters is one of them; browsing the hippie markets full of treasures and trinkets is another; as is dancing the night away at one of the white isle’s famous superclubs. But one thing that’s genuinely un-missable is the quintessential Ibiza sunset. The stuff of legend – and with good reason – this is the time of day when the island glows golden. Here at 7Pines Resort Ibiza, the iconic Ibiza sunset experience has just been taken up a notch, thanks to the sights and delights of our Pershing Yacht Terrace.

Designed in collaboration with the luxury yacht makers of the same name, the Pershing Yacht Terrace is an aesthetically sleek sunset hotspot that’s set to change the way Ibiza does dusk. Here, little everyday luxuries are a must, and in keeping with the Pershing brand’s opulent reputation, everything on offer has an added dose of extravagance. From the delectable tapas plates to the scintillating cocktails to the cigar collections – at the Pershing Yacht Terrace, guests are encouraged to indulge their holiday whims, and leave feeling all the better for it.


The bar itself pays homage to the slick lines and neutral colour palette of the world’s most luxurious motorboats. In fact, the swooping, overhanging canopy was directly influenced by the iconic Pershing 9X yacht – so imagine composite silver surfaces, buffed to reflect the beauty of the sky above, wooden decking, and a futuristic structure that nicely juxtaposes the comfort of soft, taupe-hued sofas. Like the yachts themselves, it’s effortlessly chic, conjuring the kind of ambience that allows you to switch off and slip into a state of total relaxation, just in time for nature’s greatest show to unfold.

While your eyes are adjusting to the rainbow of colours flashing through the sky, and the majestic silhouette of Es Vedra that peaks just above the horizon in the distance, a feast for your other senses also awaits. The cocktail list, for example, has been created by a passionate team of mixologists, and includes innovative flavour combinations designed solely to stimulate the tastebuds. All the classics are still there: the Manhattan, the French Martini, the Negroni, the Pisco Sour, but so too are a host of clever new concoctions inspired by the island and other influences.

Take the Es Vedra, for example. Named after the aforementioned limestone rock that plays a pivotal role in the island’s heritage, this cocktail features lemongrass-infused gin, lemon juice, almond syrup, salty water and raspberry air. The Black Sails meanwhile, has a more smoky, strong flavour thanks to the mixing of coconut oil fat washed rum, Patrón coffee, and chocolate bitters. The Pine-Icus, named after Ibiza’s indigenous pine forests and featuring ingredients inspired and created on the island, mixes vodka, Italicus bergamot liqueur, reduction of Hierbas Ibicencas, lemon juice, pine syrup and Champagne – offering not only a unique flavour combination but also a window into Ibiza’s flavour-filled past.

The small plates menu at the Pershing Yacht Terrace offers the perfect accompaniment to each cocktail. Once again paying tribute to Ibiza’s rich culinary history, it includes dishes like hand sliced Iberico ham, Menorcan cured Mahón cheese, patatas bravas – the classic fried potato squares with spiced salsa brava and alioli – Iberico ham croquetas, cantabrico anchovies and shrimp cigars served with lemon chutney. Each plate is elegantly crafted to reflect its cosmopolitan surroundings, and provides the ideal way to truly immerse oneself in an authentic Mediterranean experience.


The Pershing Yacht Terrace is open from 5pm to midnight daily, which makes it excellent for pre-dinner cocktails and snacks, sundowners, and after dinner digestifs, not to mention as a hangout for those with a fondness for live music, which will often feature. Every night until the end of August, and from Thursday to Sunday in September, special guest artists will perform at the bar from 9 pm – serenading the sunset, so to speak. Acts include Chilean-born duo The Lazy Twins, who play acoustic guitar and keyboards while singing a great range of classic covers and originals. One of Ibiza’s most popular vocalists, Jude Elliott, will also be joining us – a captivating solo artist who performs a mixed set of jazz, electronic, smooth pop and soul tracks.

The multi-talented Wiebke Pahrmann is a professionally trained trumpet player and violinist known for her unique style of classy lounge and chill-out music together with DJ Ian Kennedy who accompanies her some evenings. Yet another duo to be gracing the Pershing Yacht Terrace this summer is Bliaze – Spanish musicians and producers Juan Arance and Antonio Blakstad – who’ve made a name for themselves with their fusion of neo-soul, jazz and hip-hop. And finally, another long-term island favourite performer, Nell Shakespeare, brings her raw talent to the resort, performing acoustic covers of classic songs from all genres and DJing in a truly unforgettable style.
The Pershing Yacht Terrace truly is a multi-sensory Ibiza experience – and the best thing is, just like sunsets, no two nights are ever like.
